Ingredients

  • 2 cups mashed potatoes (about 34 medium potatoes)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup milk
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional, for added crunch)
  • Cooking spray or muffin liners

Instructions

  1. Prepare the ingredients by washing, peeling, and quartering the potatoes; boil until tender, then drain and cool.
  2. Mash the potatoes in a bowl until smooth and creamy.
  3. Mix in cheese, milk, eggs, green onions, garlic powder, salt, and black pepper until well combined.
  4. Preheat the oven to 375°F (190°C) and prepare the muffin tin with cooking spray or liners.
  5. Fill muffin cups with the potato mixture, about 3/4 full, adding extra cheese on top if desired.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, then remove and place on a cooling rack before serving.
