- 2 cups mashed potatoes (about 3–4 medium potatoes)
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/4 cup milk
- 2 large eggs
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (optional, for added crunch)
- Cooking spray or muffin liners
Instructions
- Prepare the ingredients by washing, peeling, and quartering the potatoes; boil until tender, then drain and cool.
- Mash the potatoes in a bowl until smooth and creamy.
- Mix in cheese, milk, eggs, green onions, garlic powder, salt, and black pepper until well combined.
- Preheat the oven to 375°F (190°C) and prepare the muffin tin with cooking spray or liners.
- Fill muffin cups with the potato mixture, about 3/4 full, adding extra cheese on top if desired.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes, then remove and place on a cooling rack before serving.
Notes
- These muffins are best served warm but can also be enjoyed at room temperature.
