- 9 lasagna noodles
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and cool.
- In a bowl, mix shredded chicken, ricotta, half mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Spread 2-3 tablespoons of filling on each noodle, roll it up, and place seam-side down in a greased baking dish.
- Pour Alfredo sauce over the rolls and spread evenly.
- Top with remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
- Let sit for 5 minutes, garnish with parsley, and serve.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Feel free to add vegetables like spinach or mushrooms to the filling for extra nutrition.
