- 1 package of eclair pastry shells (store-bought or homemade)
- 1 cup of heavy cream
- 1 cup of whole milk
- 1/2 cup of granulated sugar
- 3 tablespoons of cornstarch
- 1 teaspoon of vanilla extract
- 2 medium apples, peeled and diced
- 1/2 cup of caramel sauce
- 1/4 teaspoon of cinnamon
- Whipped cream for topping (optional)
Instructions
- If using homemade eclair shells, preheat oven to 400°F (200°C) and prepare the shells. If using store-bought, skip this step.
- In a saucepan, whisk milk, heavy cream, and sugar over medium heat until steaming. Add cornstarch slurry and cook until thickened.
- Dice the apples, mix with cinnamon and lemon juice, and set aside.
- Assemble the cake by filling eclair shells with pastry cream, diced apples, and drizzle with caramel, then replace the tops.
- Refrigerate the assembled cake for at least 2 hours.
- Serve chilled, drizzled with caramel and topped with whipped cream if desired.
Notes
- Use tart apples for a nice contrast to the sweet caramel.
- Chilling overnight enhances the flavor meld.
