Instructions

  1. If using homemade eclair shells, preheat oven to 400°F (200°C) and prepare the shells. If using store-bought, skip this step.
  2. In a saucepan, whisk milk, heavy cream, and sugar over medium heat until steaming. Add cornstarch slurry and cook until thickened.
  3. Dice the apples, mix with cinnamon and lemon juice, and set aside.
  4. Assemble the cake by filling eclair shells with pastry cream, diced apples, and drizzle with caramel, then replace the tops.
  5. Refrigerate the assembled cake for at least 2 hours.
  6. Serve chilled, drizzled with caramel and topped with whipped cream if desired.
