Instructions
- Prepare the ingredients: dice onion and chicken, mince garlic.
- Sauté onion in olive oil until translucent; add garlic and cook for 1 minute.
- Add chicken and cook until no longer pink.
- Add beans and tomatoes; stir to combine.
- Pour in chicken broth, bring to boil, then simmer for 20-25 minutes.
- Season to taste with Cajun seasoning, cumin, smoked paprika, salt, and pepper.
- Serve garnished with green onions, cheese, and sour cream if desired.
