Instructions
- Prepare the ingredients by chopping the potatoes, dicing the onion, and mincing the garlic.
- Heat olive oil in a large pot over medium heat, then sauté onion and bell pepper until soft.
- Add minced garlic, Cajun seasoning, and smoked paprika; cook for another minute.
- Add diced potatoes to the pot and stir for about 2 minutes.
- Pour in the vegetable broth, bring to a boil, cover, and simmer until potatoes are fork-tender (20-25 minutes).
- Blend the soup for creaminess using an immersion blender or mash some potatoes for texture.
- Stir in milk and heat for an additional 5 minutes, adjusting seasoning as needed.
- Serve in bowls, garnished with chopped green onions.

- For a spicier kick, add more Cajun seasoning.
