- 4 large bell peppers (red, yellow, or green)
- 2 cups cooked shredded chicken
- 1/2 cup Buffalo sauce (adjust to taste)
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C) and prepare bell peppers by slicing off tops and removing seeds.
- In a bowl, mix chicken, Buffalo sauce, cream cheese, half the cheddar, and spices until combined.
- Stuff each pepper with the chicken mixture and place upright in a baking dish.
- Cover with foil and bake for 25 minutes until tender.
- Remove foil, add remaining cheddar, and broil for 3-5 minutes until cheese is bubbly.
- Let cool slightly, garnish with parsley, and serve warm.
Notes
- Adjust Buffalo sauce to taste for desired spice level.
- For a creamier filling, add ranch dressing.
