- 1 lb beef stew meat, cut into 1-inch cubes
- 1 cup pearl barley
- 1 large onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Prepare the ingredients by chopping the vegetables and cutting the beef into cubes.
- Sear the beef in a pot with olive oil until browned, then set aside.
- Sauté the onion, carrots, and celery in the same pot until softened.
- Add minced garlic and seasonings, cooking for an additional minute.
- Combine the beef, barley, beef broth, and bay leaf in the pot, bringing to a boil.
- Reduce heat and simmer for 45 minutes to 1 hour until barley and beef are tender.
- Adjust seasoning as needed and remove the bay leaf.
- Serve hot, garnished with parsley if desired.

- This soup freezes well; store in an airtight container.
