Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, heat coconut milk, garlic, and ginger; simmer for 5-7 minutes, then add lemon juice, zest, salt, and pepper.
  3. Pat cod fillets dry, season with olive oil, salt, and pepper.
