Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, heat coconut milk, garlic, and ginger; simmer for 5-7 minutes, then add lemon juice, zest, salt, and pepper.
- Pat cod fillets dry, season with olive oil, salt, and pepper.
- Place cod in a baking dish and pour the sauce over it.
- Bake for 20-25 minutes until fish flakes easily and sauce is bubbling.
- Garnish with cilantro or parsley and serve.
