Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
- In a bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, then mix in vegetable oil and vanilla extract.
- Combine wet and dry mixtures, stirring gently until just combined.
- Fold in chopped apples and pecans evenly.
- Transfer batter to the prepared pan and smooth the top.
- Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
- Cool the cake in the pan for 10-15 minutes, then transfer to a wire rack.
- Prepare caramel glaze by combining sugar, butter, and heavy cream in a saucepan and simmering until dissolved.
- Once the cake is cool, pour the glaze over it and let it drip down the sides.

- Glazing a warm cake can cause the glaze to melt off, so let it cool completely before glazing.
